TAKE OUT FRIED RICE

Been ordering takeout lately? Try this easy and tasty recipe for veggie fried rice with about half the sodium and oil, that tastes even better!

I used veggies that we had grilled from the day prior for a smokey flavor but feel free to use fresh or frozen!

I also use my tofu scramble as the egg replacement but I think JustEgg would also work just as well!

Keeps in the fridge for a week

Goes well with dumplings, egg rolls, or lo mein!


TAKE-OUT STYLE FRIED RICE RECIPE

Ingredients:

Tofu scramble:

1 block of extra firm tofu

1/2 yellow onion

2 cloves of garlic

2 tsp turmeric

1 tsp paprika

s&p to taste

2 tbsp nutritional yeast

Fried rice:

2 cups brown rice

1 cup chopped veggies of choice

3 tbsp low sodium soy sauce

Directions:

Make Tofu scramble (or JustEgg): Saute onion and garlic till soft, break up tofu into small pieces over onion and garlic top with spices and nutritional yeast. Stir well to combine and cook for 5-7 min

Saute veggies in pan until cooked through or reheated, add tofu scramble and rice, stir to combine

Add soy sauce, stir till fully combined

I also wanted to add a quick tip about how I saute my veggies! I don't use oil very often so I tend to water saute my veggies! I do this in a medium heat pan and once the veggies start to stick I basically continuously deglaze the pan by adding small amounts of water at a time. I think it tastes just as great and saves me some fat and calories.
