TAHINI BANANA BREAD MUFFINS



These muffins are the delicious mini banana breads you never knew you needed with a slightly nutty flavor from the tahini! I keep these in my fridge and have been having one for a snack with my coffee. They go perfect with a little scoop of jam or peanut butter in my opinion! Hope you enjoy this easy muffin recipe :)



 

TAHINI BANANA BREAD MUFFINS RECIPE

yield: 12 muffins

time: 35 minutes


Ingredients:

Wet

2 ripe bananas

1/3 cup tahini

1/2 cup coconut sugar

1/4 cup maple syrup

1/2 cup plant milk

Dry

1/3 cup chopped walnuts

1/3 cup rolled oats

2 cups oat flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon


Directions:

Preheat oven to 370F.


Mash the bananas with a fork until creamy and no chunks. Add the remaining wet ingredients. Stir till well combined.


Combine the dry ingredients (minus the walnuts) in a large bowl. Add wet to dry and mix till no lumps, do not over mix. Fold in the walnuts.


Add to batter to lined muffin tins, (sprinkle some oats on top if desired) bake for 25 minutes or until a toothpick comes out clean.
