TOFU SCRAMBLE

Looking for a good savory breakfast option? Or something that you can meal prep for during the week? Then this tofu scramble recipe is for you! Packed with protein, spices, and veggies it is customizable and will not disappoint.

CLASSIC TOFU SCRAMBLE RECIPE


Ingredients:

1 Box of Extra firm tofu

1 small bag of frozen or mixed veggies of choice

or

2 cups of fresh mixed veggies (peppers, mushrooms, green beans, and tomatoes do the trick)

1/2 large onion diced (yellow or white preferably)

2 cloves of garlic chopped

2 tbsp nutritional yeast

1 1/2 tsp turmeric

2 tsp paprika

1 tsp salt

1 tsp black pepper

optional: handful of spinach or kale


Directions:

Drain or press tofu for 5 minutes to get out some of the liquid. Still should be a little bit wet.


Saute the onion and other veggies (frozen or fresh) in a medium skillet until soft


Add garlic and cook for another minute.


Now take the tofu and break up with your hands to small pieces over the skillet


Stir to combine the tofu and the veggies


Sprinkle all spices on top and stir to combine- tofu should begin to turn yellow!


Cook for another 3-5 minutes and enjoy :)

 

Notes:

*If you are adding greens like kale or spinach, add them after the tofu so they wilt but don't overcook!

*I wouldn't recommend using any other tofu as it may not keep its texture

*I recommend getting organic tofu if possible because soy is one of the most genetically modified crops

*If you use frozen veggies just wait for all of the liquid to drain


*Tip for making it "cheesy"

Make a small batch of cashew cheese by soaking 1/2 cup of cashews for 20 minutes in 3/4 cup water. Add 2 tbsp nutritional yeast, 1 tsp garlic powder, 1/2 tsp salt, 1/4 tsp paprika, and 1/2 lemons juice and blend till creamy. Add to tofu scramble at the end and stir till well combined for a creamy/ cheesy scramble!



If you are meal prepping...

I make this all the time for meal prep for the week and it keeps in the fridge just fine! I heat it up and eat it as is, on a wrap, or on a piece of toast. Sometimes if I know I'm going to be in a rush or if wanted to eat breakfast at work I would prep these burritos as seen below by adding a scoop of fat free refried beans to a corn tortilla then a big layer of my tofu scramble. I would wrap them up and store them in a pyrex in my freezer and just take one out when I was ready to go and microwave it for 3 minutes!
